GlenAllachie’s master distiller Billy Walker has devoted years of research to crafting a perfectly balanced whisky using a blend of carefully selected Oloroso sherry puncheon casks, bourbon barrels, and Chinquapin American virgin oak barrels.
The bourbon barrels first impart foundational notes of vanilla, butterscotch, and toffee. Next, the Oloroso sherry puncheons contribute rich aromas of plum jam, fresh berries, cinnamon, and orange peel. Finally, the Chinquapin oak barrels from the eastern United States add their unique and intense fragrance, bringing additional layers of spice, honey, nuts, and fennel. This combination completes the overall flavor profile.
Before blending, the individual whiskies were aged separately in these three types of oak casks for 36 months. After blending, the whisky was rested for another 6 months to allow the flavors to fully integrate, resulting in a rich, full-bodied GlenAllachie whisky overflowing with notes of vanilla and butterscotch.
